Exemplar Issue 4 comes packed with our fourth instalment of Exemplar Quarterly alongside two incredible coffees from Santuario Sul, Brazil (250g) and Parami, Timor Leste (250g).
Coffee plant varietals play a noteworthy role in crop success rates, disease resilience, future-proofing coffee cultivation, and last but not least, flavour. This issue is framed by two coffees representative of early and modern varietal experimentation. The Parami coffee is composed of Hibrido de Timor beans, the first Coffee Leaf Rust resistant varietal discovered on Timor Leste in the 1950s. This miraculous varietal became the foundation for many of the varietals we’re familiar with today. One example being the renowned Starmaya F1, the second Issue 4 coffee, which exemplifies how even the most sexy and unique of novel, lab-developed varietals take roots in Hibrido de Timor.
